Shredded Chicken Tacos *Crockpot Recipe*

Alright! I said I would post this so here it goes! The recipe for those deeeelish chicken tacos that I made the other day.

Crockpot Shredded Chicken Tacos
Serves 12
Ingredients:
1 packet of Taco Seasoning -I use Old El Paso Mild & I also use 2 packs for more flavor-
6 Pieces boneless, skinless chicken breasts
16 oz jar of Salsa -I use On The Border Salsa, Medium-

**The brand of taco seasoning & salsa are totally up to you.
**And if you're unsure if you want to try it with 2 packs of seasoning, do what I do...I follow the original recipe every time, which only calls for one packet of seasoning. At the end, when it is done cooking, taste it. If you think it needs more flavor add a little more seasoning, stir and taste again. And just do this until you get the taste you like. It just tastes better to US with 2. Actually this last time I only used 3/4 of the 2nd packet. So, it's all done to your taste. :)

Throw everything in a crockpot & stir it around to mix the salsa and seasoning.
Cook on high for 4-6 hours or low for 6-8 hours.
When it's done it will shred easily when stirred with a fork.

Load some onto your flour tortilla & pile on whatever toppings you like.
I personally keep it simple; chicken, cheese, & lettuce.
I use Velveeta Queso Blanco Shredded cheese. SO good. But again, use whatever you'd like.

Then chow down & enjoy!

Told ya, ridiculously easy!

Couple of things to add...
It says it serves 12. I can't vouch for that, but it's probably pretty accurate. When I cook this, I normally cook it for about 5 people. We eat have about 2 (sometimes 3) tacos each. And we ALWAYS end up with enough leftovers for 2 to 3 days (or more). So, this is wonderful if you're on a budget and do not mind leftovers for lunch and dinner for a few days, or if you are one of those who likes to freeze leftovers to have at other times. :)
Us? We just live off of tacos for 3+ days, lol...not really. But we do eat the leftovers over the next few days. I had tacos for lunch yesterday (as well as my husband and parents), and I had one again today -just 30 minutes ago- & we STILL have half of a 64oz bowl left. So...if this gives you any idea of how much it makes. :)

Picture proof: This is what is left right now!

I also make rice. Nothing extravagant, just the Knorr's Rice Sides. I make either the Spanish, Taco, or Mexican Rice. This go 'round we had Spanish Rice. mmm! Delicioso!

I have to say that I am so thankful for Pinterest! That's where I found this recipe. The link took me to Sarah's blog Chocolate Therapy, and it just wouldn't be right to not give her a shout out for posting this!
So, thanks Sarah!! Head over to her post about it, she includes a Tortilla Soup recipe that you can use the leftover chicken for if you'd like!

Well, there you have it.
I turned a simple recipe post into a small story. -lol-

Hope you enjoy them if you try them! They have been a hit in my house since I first tried them 6 months ago. We try to have them at least once a month or about every 6-8 weeks. (We stretch it out).

Have a great day!
